Would paper hover in the air if there was a jet of air under it? Of course not, it would slide to one side.

We're not talking about a jet of air; we're talking about a shaped beam of sound that terminates at a specific point.
Say you made that shape a bowl - if the beam can push the paper out of the way, why couldn't it hold the paper up?

Well, obviously, they would fall though it.
They arnt claiming to have some force-field magic here, simply localised precise presure sensation.
This is still a very cool piece of technology.
